Ingredients:

  • softened butter – 120 g;
  • salt – a pinch;
  • sugar – 100 g;
  • egg yolks – 3 pcs.;
  • flour – 240 g;
  • baking powder – 16 g;
  • milk – 90 g;
  • cherries – 600 g;
  • sugar – 60 g;
  • cornstarch – 30 g;
  • water – 50 g;
  • egg whites – 3 pcs.;
  • salt – a pinch;
  • sugar – 60 g;
  • cornstarch – 1 tsp.;
  • almond flakes – 50 g.

Preparation Method

Beat the softened butter with a pinch of salt and sugar until fluffy. Add the yolks one by one, without stopping to beat. Sift the flour with the baking powder and gradually add to the butter mixture. Pour in the milk and knead the dough until smooth.

Transfer it to a 28×18 cm baking dish lined with parchment, smooth it out, and bake in a preheated oven at 180 °C for about 25 minutes until lightly browned.

For the filling, combine the cherries with sugar in a pan, bring to a boil over medium heat, stirring constantly. Dissolve the cornstarch in cold water, pour it into the cherries, and cook for another 3 minutes until thickened. Remove from heat, let cool, and then spread on the baked base.

For the meringue, beat the egg whites with a pinch of salt until fluffy foam forms. Gradually add the sugar and beat until stiff peaks appear. Add the cornstarch and beat again. Spread the meringue over the cherry layer, smooth it out with a spatula, sprinkle with almond flakes, and bake for another 20 minutes at 180 °C until golden on top.
